Cucumber Dilly Bites
Cream cheese, yogurt and plenty of fresh dill create a creamy, delicious topping for these light bites.
Ingredients for Cucumber Bites with Dill Cream Cheese:
- 4 English cucumbers
- 1 pint grape or cherry tomatoes
- 1 (8 oz) package cream cheese, softened to room temp.
- 1 small (5.3 oz) container plain Greek yogurt
- 4 tbsp fresh dill, minced
- 1 tbsp powdered Ranch dressing mix (such as Hidden Valley)
Instructions :
Slice cucumbers into rounds, about ½-inch thick. We like the striped look of the partially peeled cucumbers. Slice the grape (or cherry) tomatoes in half (or quarters, if they are larger) and set aside.
In a bowl of a stand mixer or with an electric hand mixer combine the cream cheese, Greek yogurt, fresh Dill and Ranch dressing powder. Mix until well combined.
Add this cheese mixture to a piping bag with a tip (if you don't have one, you can use a large Ziplock bag with the tip of the corner snipped off).
Pipe the cream cheese mixture onto each cucumber round, then top with a cherry tomato half. Add an additional sprig of dill to each one for an added garnish if desired.
Tips and Tricks:
- Store your tomatoes on your counter for the best flavor.
- Use dried dill if you cannot use fresh. When substituting dried herbs cut down on the amount. For this recipe use 2 tablespoon dried dill, also let cream cheese mixture chill longer to really incorporate the dill flavor.
- Use a fancy piping bag, get creative…if you don’t have a piping bag, you can use just a plastic bag and snip the corner off the bag to pipe the mixture onto each cucumber slice.
Make Ahead:
To make this appetizer ahead, slice cucumbers and tomatoes and store separately in zip top bags in the refrigerator. Combine the ingredients for cream cheese mixture and keep refrigerated in a piping bag, the longer this mixture chills the better the flavor. When ready to serve top cucumber slices with cream cheese mixture and top with tomato and more fresh dill. You can fully assemble these bites and chill them in the fridge the day before serving.
