Cabbage Roll Soup - Soup Recipe

 Cabbage roll soup is hearty, warm and filling.




Ingredients:

    • 2 teaspoons olive oil
    • 1 pound ground beef, very lean
    • salt and pepper, to taste
    • 1 onion, finely diced
    • 1 teaspoon garlic, minced
    • 4 cups green cabbage, roughly chopped
    • 2 carrots peeled, halved and sliced
    • 4 cups beef broth
    • 3  8oz. cans tomato sauce
    • 1/2 cup uncooked long grain rice
    • 1 bay leaf
    • 2 tablespoons brown sugar
    • 2 tablespoons parsley, chopped

How to make Cabbage Roll Soup

  1. In a large pot, add the olive oil and warm over medium high heat. Add the ground beef and season with salt and pepper to taste.
  2. Cook the ground beef, breaking it up with a spatula, until the beef is browned, this will take about 5 minutes.
  3. Add the diced onion and minced garlic and cook for another 2-3 minutes until the onion is translucent.
  4. Add the cabbage, carrots, beef broth, tomato sauce, uncooked rice, bay leaf and brown sugar to the pot. Season with salt and pepper to taste.
  5. Bring the soup to a simmer and cook for 25 minutes or until the rice is tender. Remove the bay leaf before serving.
  6. Serve warm with a sprinkle of chopped parsley
